Coffee with protein! Just say no…

Ever notice how a much a cardboard quart container of egg whites looks a lot like a cardboard quart of coffee creamer?

I noticed the similarities this morning after I poured a bunch of egg whites into my coffee. Don’t try this at home.coffee-black

There was a split second when I thought maybe I was onto something:  Coffee with protein! But the consistency and look – brown runny goo – made me throw up in my mouth a little bit. I dumped it out.

Which brings me to my breakfast: Egg white omelette. My coach made me give up oatmeal because it has no protein, ergo, no redeeming value. So, I got creative and designed my own egg-white omelette. The great thing about his omelette is you can make it at night, stick it in the frig and then pop it in the microwave in the morning.

One egg

1/3 cup egg whites

1 heaping teaspoon ground walnuts

2 tsp gluten-free flour or pancake mix

1 teaspoon stevia

1/2 teaspoon salt

ground cinnamon to taste

Whip together with whisk and pour into heated pan, greased with coconut oil. While cooking, get a handful of organic blueberries or strawberries (these are two fruits you should splurge and buy organic. The pesticides, fungicides and herbicides used on these crops are nasty.)

Flip omelette. When finished, remove omlette as though it’s one big pancake. Place it on a place, put fruit on one side, flip the other side on top of the fruit and, voila, healthy breakfast (You can pour a little agave over the top to get that IHOP feel).

I estimate my omelette has about about 20 grams of protein and the ground walnuts add a little paleo fat mojo to the mix.
